Method
- Heat a pan and add some olive oil. Brown the cut pieces of eggplant over medium heat. Once cooked, add in some lemon zest and season with salt and pepper. Remove and place on a paper towel.
- Clean the pan and add a teaspoon of hot oil, add sliced onions and garlic. Once it cooks lightly, add the sun-dried tomatoes, and diced chillies. Next, add white wine, vegetable stock, and tomato puree and gently mix.
