Take a cast iron skillet and heat some olive oil on medium heat. Add chopped garlic and let it cook.
- Add all the vegetables mentioned in the ingredients list. You can also add leftovers if you have any. Saute all these vegetables for some time.
Stir occasionally for 10 minutes until the vegetables are tender and crispy.
Prepare the egg mixture evenly while the vegetables are being cooked.

6 slices bacon, diced/smoked salmon
1/2 cup cherry tomato, halved
1 cup baby spinach leaves
- 6 large eggs

- Cheese of your choice
- Basil leaves for garnishing

Take a bowl to make an egg mixture.
